- Sour European Wheat Beer from Berlin, Germany
- Popular in 18th and 19th Century
- Style is 23A in BJCP, went through style characteristics
- Main notes: High Carbonation, can be cloudy, little to no hops, refreshing, IBUs 3-8, very low ABV
- 50-50 Pilsner and Wheat Great, Hallertau Hops
- Mixed fermentation with yeast and bacteria
- kettle sour (boil like normal, then chill to 90-100 and add bacteria for 24-48 hrs, bring back to boil
- Use an acid yeast–Philly sour
- No funk, refreshing, high lactic, clean and lemony,dry–not sweet, no acetic/vinegar, something light not warhead in tartness/sourness
